“Salt in moderation!” That’s the motto that you hear more and more and one that you should not take with a grain of salt. Our salt intake continues to increase, but our real need is limited to a pinch of a few grams per day. This grainy white substance plays a role in our fluid balance, among other things. Too much salt quickly makes you thirsty, and a sip of seawater won’t quench that thirst. But salt not only tastes good, but it also looks good too. When viewed under a microscope, the white-gold looks good enough to eat — in moderation, of course.
